
INGREDIENTS:
- 4 lb. pork roast
- 2 T brown sugar (+1 cup, see below)
- 2 tsp. red crushed pepper
- 2 tsp. kosher salt
- 2 tsp. cumin
- 2 tsp. paprika (4 tsp total, see below)
- 2 cloves garlic, minced
- 1 C chicken stock
- 1 can Coke
- 1 onion, sliced (optional)
INSTRUCTIONS:
- Put in crock pot on low for 8 hours/ overnight
- Shred and add:
- 1 C brown sugar
- 2 tsp. paprika
- Return to crock pot for 8-10 hours
Cafe Rio Creamy Tomatillo Dressing
INGREDIENTS:
- 1 (4 oz) packet buttermilk ranch salad dressing
- 2 tomatillos
- 1/2 bunch cilantro
- 1 garlic cloves
- 1 juice of lime
- 1 jalapeƱos
INSTRUCTIONS:
- Mix buttermilk dressing as directed on package
- Combine all other ingredients and mix in a blender
- Seal in airtight contained in refrigerator
