INGREDIENTS:

  • 4 lb. pork roast
  • 2 T brown sugar (+1 cup, see below)
  • 2 tsp. red crushed pepper
  • 2 tsp. kosher salt
  • 2 tsp. cumin
  • 2 tsp. paprika (4 tsp total, see below)
  • 2 cloves garlic, minced
  • 1 C chicken stock
  • 1 can Coke
  • 1 onion, sliced (optional)

INSTRUCTIONS:

  1. Put in crock pot on low for 8 hours/ overnight
  2. Shred and add:
    1. 1 C brown sugar
    2. 2 tsp. paprika
  3. Return to crock pot for 8-10 hours

Cafe Rio Creamy Tomatillo Dressing

INGREDIENTS:

  • 1 (4 oz) packet buttermilk ranch salad dressing
  • 2 tomatillos
  • 1/2 bunch cilantro
  • 1 garlic cloves
  • 1 juice of lime
  • 1 jalapeƱos

INSTRUCTIONS:

  1. Mix buttermilk dressing as directed on package
  2. Combine all other ingredients and mix in a blender
  3. Seal in airtight contained in refrigerator
