INGREDIENTS:

  • 1 Tablespoon dehydrated onion flakes
  • 1/3 cup sugar
  • 1 cup oil (I prefer avocado oil for the mild flavor)
  • 1/2 cup vinegar (red wine or apple cider)
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried mustard powder

—-blend in a blender—-

Then add:

  • 1 Tablespoon poppy seeds

Once the poppy seeds are added to the dressing, don’t blend but gently stir them in with a spoon. Add dressing to a jar and refrigerate until you are ready to eat.

 

SALAD:

  • 4-5 big handfuls of spinach
  • 1 head of iceberg lettuce, washed, dried, and chopped
  • 1/8 of a red onion, diced or sliced
  • 1 to 1/2 cup bacon, cooked and crumbled
  • 3/4 cup swiss (or mozzarella, I like to used fresh motz, diced) cheese, grated or cubed
  • 1 cup cottage cheese (I usually omit this)

Combine spinach, iceberg and cottage cheese. Toss together with desired amount of salad dressing, then add salad toppings such as cheese, bacon, and onion. Serve immediately. Enjoy!
