
INGREDIENTS:
- 1 pound sausage (“traditional” sausage, you can also use spicy Italian sausage, just not maple flavored breakfast sausage)
- 1 finely diced white/yellow onion
- 3-5 cloves of garlic, minced
- 4-5 large carrots, finely diced
- 4-5 ribs of celery, finely diced
- salt and pepper to taste
- 1 T dried Italian seasoning
- 1 T dried basil
- 2 cups of your favorite marinara sauce
- 6-8 cups chicken or beef broth
- 1.5 pounds cheese tortellini (one part of Costco 2-pack)
DIRECTIONS:
- Cook sausage and onion together in a large pot over medium high heat until both are completely cooked through.
- Add garlic, carrots, celery, and seasonings. Let cool together for a few minutes.
- Add the marinara sauce and the chicken broth. Cover and cook on high heat for 15 minutes.
- Add tortellini and let cook for another 5-10 minutes until soft. (Careful not to overcook).
