INGREDIENTS:

  • 1 pound sausage (“traditional” sausage, you can also use spicy Italian sausage, just not maple flavored breakfast sausage)
  • 1 finely diced white/yellow onion
  • 3-5 cloves of garlic, minced
  • 4-5 large carrots, finely diced
  • 4-5 ribs of celery, finely diced
  • salt and pepper to taste
  • 1 T dried Italian seasoning
  • 1 T dried basil
  • 2 cups of your favorite marinara sauce
  • 6-8 cups chicken or beef broth
  • 1.5 pounds cheese tortellini (one part of Costco 2-pack)

DIRECTIONS:

  1. Cook sausage and onion together in a large pot over medium high heat until both are completely cooked through.
  2. Add garlic, carrots, celery, and seasonings. Let cool together for a few minutes.
  3. Add the marinara sauce and the chicken broth. Cover and cook on high heat for 15 minutes.
  4. Add tortellini and let cook for another 5-10 minutes until soft. (Careful not to overcook).
