
INGREDIENTS:
For the seasoning:
- 8 teaspoons salt
- 2 teaspoons ground black pepper
- 1 Tablespoon True Lime seasoning (lime, garlic, and cilantro flavor)
- 1 teaspoon dried cilantro
- 1 teaspoon cumin
- 2 teaspoons paprika
- 3/4 teaspoons oregano
- 3 teaspoons onion powder
- 4 teaspoons garlic powder
Mix together and store in a small jar or ziplock baggie. Use this to season your meat as needed, generally about 1/2 Tablespoon of seasoning per pound of meat, or to taste.
INSTRUCTIONS:
Instant Pot:
- Sear sides of 2-2.5 pound pork sirloin tip roast using the saute function in the Instant Pot.
- Push saute, add in 1-2 tablespoons of oil, then put the meat in the pot and let the meat get a quick 1/2 minute cook on each side.
- Add 1/2 cups water
- Push the “meat stew” button, seal the lid, and set for 100 minutes (or if cooking more than one roast, cook for 110 minutes)
Slow cooker:
- Cook 7-8 hours on low, or 3-4 hours on high.
**If cooking frozen meat, increase time to 120 min in instant pot.
