INGREDIENTS:

  • 2 Tablespoons extra virgin olive oil
  • 2-4 cloves garlic, minced
  • 4 cups chopped fresh garden tomatoes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • 1 cup fresh mozzarella, diced (or mozzarella pearls)
  • 1 cup freshly grated parmesan
  • 1 large fistful of fresh basil, chopped to about 1/2 cup
  • 1/2 pound thin spaghetti, cooked to al dente

INSTRUCTIONS:

  1. In a large sauce pan, heat oil and add garlic.
  2. Cook over a medium flame 1 minute, until fragrant.
  3. Add tomatoes, salt, pepper and sugar.
  4. Stir.
  5. Put the lid on the pan and cook on medium heat, 10 minutes.
  6. Remove lid and simmer over medium heat, stirring often, for 5 minutes.
  7. Add cheeses, basil, and pasta.
