
INGREDIENTS:
- 3/4 cup melted butter
- 2 eggs
- 1 cup sugar (coconut sugar is great in these!)
- 2 Tablespoons milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 2 cups unbleached, all-purpose flour
- 3 overripe, mashed bananas
- 3/4 cup mini chocolate chips, plus more for the top
DIRECTIONS:
- Combine butter, eggs, milk, vanilla and sugar. Mix well to combine.
- In a separate bowl, combine the flour, salt, baking powder and baking soda. Whisk to combine and eliminate any lumps.
- Add 1/2 of the dry ingredients to the wet ingredients, mix until there are not lumps, then repeat with the other 1/2.
- Add the mashed bananas and chocolate chips, mix gently to combine but don’t over mix.
- Fill 2 greased small (not mini size) baking pans or 18 lined muffin tins with the batter. Sprinkle extra chocolate chips on top.
- Bake at 350 degrees for 16-18 minutes for muffins, or 45 minutes (start checking at 35 min) for loaves. Test doneness by inserting a fork or toothpick and looking for only a few crumbs instead of wet batter remaining.
- Let cool for a few minutes and enjoy!
Notes: I use the disposable, aluminum loaf pans (8 in x 3 3/4 in x 2 3/4 in) and just line them with parchment paper.
