INGREDIENTS:

  • 4 zucchini cut and diced
  • 1 large head of broccoli or small bag
  • 1 red pepper chopped
  • 1/2 bag of carrot slices or slice your own
  • 1 package of chicken sausage
  • 4 tablespoons avocado oil
  • salt and pepper

DIRECTIONS:

  1. Preheat oven to 400.
  2. Line a large sheet pan with foil or parchment paper.
  3. Prep the veggies: cut up the zucchini, chop the broccoli, chop the peppers into thick squares, and cut the sausage in desired slices.
  4. Place all the veggies and sausage on a sheet pan. Pour the olive oil and top with salt and pepper. Toss to evenly coat all the veggies and meat.
  5. Bake for 20-25 min.
  6. Serve with rice pilaf!
