INGREDIENTS:

  • 1/2 onion, diced
  • 2 carrots, diced
  • 1 Tbsp oil
  • 1 3/4 c brown rice
  • 2 c bone broth (or chicken)
  • 2 sprigs thyme (or 1 tsp)
  • 1 tsp salt
  • ground black pepper
  • 2 c broccoli, cooked and chopped

DIRECTIONS:

  1. Saute onions and carrots in the oil until starting to brown.
  2. Add rice and saute another minute.
  3. Add remaining ingredients except broccoli.
  4. Secure lid and pressure cook high pressure 30 minutes.
  5. Let sit at least 10 minutes before releasing pressure.
  6. Stir in cooked broccoli and serve.
