
INGREDIENTS:
- 1/2 onion, diced
- 2 carrots, diced
- 1 Tbsp oil
- 1 3/4 c brown rice
- 2 c bone broth (or chicken)
- 2 sprigs thyme (or 1 tsp)
- 1 tsp salt
- ground black pepper
- 2 c broccoli, cooked and chopped
DIRECTIONS:
- Saute onions and carrots in the oil until starting to brown.
- Add rice and saute another minute.
- Add remaining ingredients except broccoli.
- Secure lid and pressure cook high pressure 30 minutes.
- Let sit at least 10 minutes before releasing pressure.
- Stir in cooked broccoli and serve.
