Italian chicken meatballs served over pasta and topped with marinara and mozzarella cheese.

INGREDIENTS

  • 1 pound ground chicken
  • 1 large egg
  • 1/2 cup Italian breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons olive oil
  • 1 (28 ounce) jar spaghetti sauce
  • 1 (16 ounce) package Penne pasta (cooked according to package directions)
  • 1 cup shredded Mozzarella cheese
  • 1 Tablespoon fresh basil

INSTRUCTIONS

  1. In a large mixing bowl, combine chicken, egg, breadcrumbs, Parmesan cheese, salt, and pepper; set aside.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Roll chicken mixture into 1-inch balls and place in skillet.
  4. Brown meatballs on all sides and cook through completely.
  5. Drain excess oil and pour spaghetti sauce over the meatballs in the skillet.
  6. Cook for 3-5 minutes, or until sauce is heated through.
  7. Serve meatballs and sauce over cooked pasta and top with shredded Mozzarella and fresh basil.
