
INGREDIENTS:
SHRIMP
- 1 pound raw, small deveined shrimp with no tail
- 1 T olive oil
- 3 cloves minced garlic
- 1 tsp chili powder
- 1/4 tsp paprika
- 1/4 tsp salt
- juice of one lime
- In a bowl, toss shrimp with salt, paprika, and chili powder. In a frying pan over medium heat, add olive oil and garlic.
- Stir around for one minute, then add shrimp, stirring occasionally, until pink and no longer soft (120-145 degrees), about 5 minutes.
- Squeeze with the juice of one lime. Set aside.
AVOCADO DRESSING
- 1 avocado
- 1/4 cup cilantro, chopped
- 1 clove garlic, minced
- 3/4 tsp salt
- 1/4 cup sour cream
- 3 T olive oil or avocado oil
- juice of one lime
- Combine ingredients in a food processor and pulse until smooth and creamy.
- Assemble the tacos with tortillas, lettuce, and avocado dressing.
NOTES: We served with tortilla land tortillas, rice, mexican rice, shrimp, and avocado dressing.
