INGREDIENTS:

SHRIMP

  • 1 pound raw, small deveined shrimp with no tail
  • 1 T olive oil
  • 3 cloves minced garlic
  • 1 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • juice of one lime
  1. In a bowl, toss shrimp with salt, paprika, and chili powder. In a frying pan over medium heat, add olive oil and garlic.
  2. Stir around for one minute, then add shrimp, stirring occasionally, until pink and no longer soft (120-145 degrees), about 5 minutes.
  3. Squeeze with the juice of one lime. Set aside.

AVOCADO DRESSING

  • 1 avocado
  • 1/4 cup cilantro, chopped
  • 1 clove garlic, minced
  • 3/4 tsp salt
  • 1/4 cup sour cream
  • 3 T olive oil or avocado oil
  • juice of one lime
  1. Combine ingredients in a food processor and pulse until smooth and creamy.
  2. Assemble the tacos with tortillas, lettuce, and avocado dressing.

NOTES: We served with tortilla land tortillas, rice, mexican rice, shrimp, and avocado dressing.
