
Serves 6-8
INGREDIENTS:
- 2 lbs brussel sprouts, cut in half lengthwise
- 1 small onion sliced thin
- 2 T maple syrup
- 2 T extra virgin olive oil
- 1 cup crumbled bacon
- 1 cup candied pecans
- 1/2 cup crumbled goat cheese
DIRECTIONS:
- Line a baking sheet with foil and place brussel sprouts and onions on the sheet. Drizzle with olive oil and generously season with salt, pepper, and garlic powder. Use your hands to evenly distribute the oil and spices all over the vegetables.
- Bake on 400 for about 20 minutes. For crispier brussel sprouts, broil on high for one to two minutes before taking them out of the oven.
- Once cooked, move to bowl and drizzle with maple syrup. Toss all together with bacon and candied pecans. Lay on serving platter and sprinkle goat cheese as the final step.
