Serves 6-8

INGREDIENTS:

  • 1 pound fresh green beans, trimmed
  • 1 or 2 cloves garlic, minced
  • 2 T honey
  • 1 T mustard, dijon or whole grain mustard
  • 1 T rice vinegar
  • 1 T avocado oil
  • 1/2 tsp sea salt
  • pepper to taste
  • 2 T sliced/slivered almonds, optional

DIRECTIONS:

  1. Add green beans to a baking dish. Combine remaining ingredients to a bowl. Mix.
  2. Pour sauce over green beans and toss them together evenly.
  3. Roast at 425, uncovered for 10 minutes. Then add the slivered almonds and roast for another 5-10 minutes or until green beans are tender-crisp. Remove from oven and serve immediately.
