
Serves 8-10
INGREDIENTS:
- 2 cups diced, cooked potatoes. (Use either leftover baked potatoes or frozen cubed potatoes that are pre-cooked.)
- 1 large onion, diced
- 1 lb pork sausage
- 1 lb bacon
- 4 green onions, chopped
- 12 eggs
- 1 cup whole milk
- 1 1/2 tsp seasoned salt
- 1/2 tsp pepper, or to taste
- 2 cups grated cheddar cheese
DIRECTIONS:
- In a frying pan, cook the bacon. Cut into into 1/2 inch pieces. Set aside and drain the grease.
- In the same frying pan, cook the sausage thoroughly. Set sausage aside but leave the drippings.
- Saute the diced onion in the sausage drippings until translucent and cooked through.
- In a large bowl, combine eggs, milk, seasoned salt and pepper. Whisk together.
- To a greased 9×13 baking dish, layer the bottom of the pan with the cooked potatoes, the sautéed onion, most of the sausage, most of the bacon, most of the green onions and most of the cheese. Pour egg mixture into pan.
- Top with remaining cheese, green onions, bacon and sausage.
- Bake uncovered at 350 for 35-45 minutes. Serve immediately. Cover and refrigerate leftovers.
NOTES:
- You can plan ahead by prepping and assembling the casserole, then cover and refrigerate up to 48 hours in advance.
